  • 1 tsp Fresh Lime Juice prefer fresh over bottled
  • 2 cloves Garlic minced, fresh is key for flavor
  • 1 tsp Ginger grated, adds zest
For the Rice Base
  • 2 cups Cooked Rice like jasmine, basmati, or cauliflower rice
For Cooking
  • 1 tbsp Vegetable Oil or Coconut Oil for cooking the chicken
  • Salt & Pepper to taste
For Garnishing
  • Fresh Cilantro or Green Onions for garnish; parsley can be substituted

Step-by-Step Instructions
  1. Heat 1 tablespoon of vegetable oil or coconut oil over medium heat in a large skillet until it shimmers.
  2. Add 1 pound of diced boneless, skinless chicken breasts. Season with salt and pepper, cooking for about 5-7 minutes until golden brown.
  3. Stir in 2 minced garlic cloves and 1 teaspoon of grated ginger. Sauté for about 1 minute until fragrant.
  4. Pour in 1 can of coconut milk, 1 tablespoon of soy sauce, and 1 teaspoon of fresh lime juice. Let it simmer for 5-7 minutes.
  5. Cook 2 cups of your chosen rice according to package instructions.
  6. Serve the coconut chicken over warm rice and garnish with freshly chopped cilantro or sliced green onions.
