Baking Instructions
- Preheat your oven to 350°F (175°C). Grease your loaf pan with vegan butter.
- In a large mixing bowl, mash 2-3 ripe bananas until smooth then mix in melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
- In a separate bowl, whisk together gluten-free flour, baking powder, baking soda, cinnamon, and salt. Mix until airy.
- Gradually pour the dry mixture into the wet ingredients, folding until no flour patches remain to create the batter.
- In a small bowl, mix melted vegan butter, brown sugar, and cinnamon for the filling.
- Pour half of the batter into the greased loaf pan, layer with cinnamon filling, dollop on remaining batter, and swirl with a knife.
- Bake for about 45 minutes until golden brown and a toothpick comes out clean.
- Let cool for 10 minutes before transferring to a wire rack. Drizzle optional icing if desired.
