Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C). Grease your loaf pan with vegan butter.
  2. In a large mixing bowl, mash 2-3 ripe bananas until smooth then mix in melted vegan butter, maple syrup, almond milk, and vanilla extract until smooth.
  3. In a separate bowl, whisk together gluten-free flour, baking powder, baking soda, cinnamon, and salt. Mix until airy.
  4. Gradually pour the dry mixture into the wet ingredients, folding until no flour patches remain to create the batter.
  5. In a small bowl, mix melted vegan butter, brown sugar, and cinnamon for the filling.
  6. Pour half of the batter into the greased loaf pan, layer with cinnamon filling, dollop on remaining batter, and swirl with a knife.
  7. Bake for about 45 minutes until golden brown and a toothpick comes out clean.
  8. Let cool for 10 minutes before transferring to a wire rack. Drizzle optional icing if desired.
