  1. Remove the cooked ham from the refrigerator and keep it wrapped. Allow it to sit at room temperature for about 2 hours.
  2. Preheat your oven to 325°F (163°C).
  3. In a small bowl, mix black pepper, cayenne, allspice, onion powder, kosher salt, thyme, brown sugar, chipotle chili powder, garlic powder, smoked paprika, and cinnamon. Rub this mixture over your ham.
  4. Cover the seasoned ham tightly with aluminum foil and bake for 1 1/2 hours.
  5. While the ham bakes, create the glaze by combining brown sugar, maple syrup, bourbon (if using), and pineapple juice in a saucepan. Bring to a boil, then simmer for 10-15 minutes to thicken.
  6. Increase the oven temperature to 400°F (204°C). Remove the foil, brush the glaze over the ham, and scatter diced pineapple around it.
  7. Return the ham to the oven, uncovered, for an additional 25-30 minutes.
  8. Allow the ham to rest for about 5 minutes before slicing.
