- Remove the cooked ham from the refrigerator and keep it wrapped. Allow it to sit at room temperature for about 2 hours.
- Preheat your oven to 325°F (163°C).
- In a small bowl, mix black pepper, cayenne, allspice, onion powder, kosher salt, thyme, brown sugar, chipotle chili powder, garlic powder, smoked paprika, and cinnamon. Rub this mixture over your ham.
- Cover the seasoned ham tightly with aluminum foil and bake for 1 1/2 hours.
- While the ham bakes, create the glaze by combining brown sugar, maple syrup, bourbon (if using), and pineapple juice in a saucepan. Bring to a boil, then simmer for 10-15 minutes to thicken.
- Increase the oven temperature to 400°F (204°C). Remove the foil, brush the glaze over the ham, and scatter diced pineapple around it.
