Ingredients
  

For the Chicken
  • 1 pound Chicken Breasts Can substitute with chicken thighs.
  • 1 tablespoon Olive Oil Can substitute with butter.
  • 1 tablespoon Butter Omit for dairy-free.

  • 2 teaspoons Italian Seasoning Substitute with fresh herbs if desired.
  • ½ teaspoon Garlic Powder Can substitute with fresh garlic.
  • ½ teaspoon Onion Powder Use fresh onions for more flavor.
  • 1 tablespoon Lemon Zest
  • 2 tablespoons Lemon Juice Adjust to taste.
For the Vegetables
  • 2 cups Zucchini Can substitute with summer squashes.
  • 2 cups Yellow Squash Consider using bell peppers.
For the Finish
  • ¼ cup Parmesan Cheese Use nutritional yeast for vegan option.
  • 2 tablespoons Fresh Parsley Can substitute with fresh basil.

Method
 

Preparation
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Season diced chicken breasts with salt, pepper, 2 teaspoons of Italian seasoning, ½ teaspoon of garlic powder, onion powder, and lemon zest.
  3. Add the chicken to the skillet and cook for about 3 minutes on each side until fully cooked. Transfer to a plate.
Cooking
  1. In the same skillet, add remaining olive oil and 1 tablespoon of butter.
  2. Add zucchini and yellow squash, seasoning lightly with salt and pepper. Sauté for around 4 minutes until tender.
  3. Return the cooked chicken to the skillet, drizzling lemon juice over everything.
  4. Gently toss to combine the flavors, and finish with Parmesan cheese and parsley.
  5. Serve immediately while warm, garnished with additional lemon zest if desired.
