Preparation
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Season diced chicken breasts with salt, pepper, 2 teaspoons of Italian seasoning, ½ teaspoon of garlic powder, onion powder, and lemon zest.
- Add the chicken to the skillet and cook for about 3 minutes on each side until fully cooked. Transfer to a plate.
Cooking
- In the same skillet, add remaining olive oil and 1 tablespoon of butter.
- Add zucchini and yellow squash, seasoning lightly with salt and pepper. Sauté for around 4 minutes until tender.
- Return the cooked chicken to the skillet, drizzling lemon juice over everything.
- Gently toss to combine the flavors, and finish with Parmesan cheese and parsley.
- Serve immediately while warm, garnished with additional lemon zest if desired.
