Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha adjust to taste
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Wooden or metal skewers if using wooden, soak in water for 30 minutes

Method
 

  1. In a bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, garlic powder, onion powder, salt, and black pepper. Mix well to create the bang bang sauce.
  2. Add the chicken cubes to the bowl and toss to coat evenly with the sauce. Cover and refrigerate for at least 30 minutes to marinate.
  3. Preheat your grill or grill pan over medium-high heat.
  4. Thread the marinated chicken onto the skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  6. Remove from the grill and drizzle with any remaining bang bang sauce before serving.
  7. Serve warm with lime wedges on the side.
