Ingredients
  

For the Kofta
  • 1 pound Ground Chicken Use dark meat for richer flavor.
  • 1 Onion Finely chopped.
  • 3 cloves Garlic Minced.
  • 1/4 cup Fresh Cilantro Chopped.
  • 1/4 cup Fresh Mint Chopped, can be omitted.
  • 1 Egg For binding.
  • 1/2 cup Breadcrumbs Panko is preferred.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Smoked Paprika Substitute regular paprika if needed.
  • 1/4 teaspoon Cayenne Pepper Optional for heat.
For the Garlic Yogurt Sauce
  • 1 cup Greek Yogurt Low-fat or full-fat.
  • 1 tablespoon Fresh Dill Chopped, tarragon can be a substitute.
  • 1 tablespoon Lemon Juice Freshly squeezed.
  • 1 tablespoon Olive Oil Mild oil can be substituted.

Method
 

Step-by-Step Instructions
  1. In a large mixing bowl, combine ground chicken, finely chopped onion, minced garlic, chopped cilantro, and mint. Add the egg, breadcrumbs, ground cumin, ground coriander, smoked paprika, cayenne pepper, salt, and black pepper. Stir until just combined.
  2. Cook a small patty in a skillet over medium heat for 3-4 minutes to taste test and adjust seasoning.
  3. With wet hands, shape the kofta mixture into 1.5 to 2-inch elongated pieces and lay them on a plate.
  4. Cover the formed kofta and refrigerate for at least 30 minutes.
  5. In a large skillet, heat about 2 tablespoons of olive oil over medium heat. Add the chilled chicken kofta and sear for about 6-8 minutes until golden brown and cooked to 165°F.
  6. In a separate bowl, mix Greek yogurt, minced garlic, lemon juice, olive oil, and chopped fresh dill for the sauce. Season to taste.
  7. Drizzle the garlic yogurt sauce over kofta, garnish with parsley, and serve with pita bread or rice.
