Heat the olive oil in a large skillet over medium heat.
Using a spoon or your hands, form the chicken mixture into small patties, about 2-3 inches in diameter.
Carefully place the patties in the skillet, making sure not to overcrowd the pan.
Cook for about 4-5 minutes on each side, or until golden brown and cooked through.
Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
While the fritters are cooking, prepare the garlic aioli dip by whisking together the mayonnaise, minced garlic, lemon juice, salt, and black pepper in a small bowl until smooth.
