  • 1 cup napa cabbage thinly sliced
  • 1 cup red bell pepper thinly sliced
  • 1 cup carrots shredded
  • 1/2 cup green onions chopped
  • 1/2 cup roasted cashews
  • 1/4 cup cilantro chopped
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 teaspoon fresh ginger grated
  • 1 teaspoon garlic minced
  • 1 teaspoon sesame seeds

Method
 

  1. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, ginger, garlic, and sesame seeds until well combined. Set aside.
  2. In a large mixing bowl, combine the shredded chicken, mixed salad greens, napa cabbage, red bell pepper, carrots, green onions, roasted cashews, and cilantro.
  3. Drizzle the sesame dressing over the salad mixture and toss gently to coat all the ingredients evenly.
  4. Serve immediately or chill in the refrigerator for about 30 minutes to allow the flavors to meld.
