  • 8 ounces rotini pasta
  • 1 tablespoon olive oil
  • 1 pound cooked chicken breast diced
  • 1 cup cherry tomatoes halved
  • 1 cup romaine lettuce chopped
  • ½ cup Caesar dressing
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • ¼ cup croutons optional

Method
 

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooled pasta, diced chicken, cherry tomatoes, and chopped romaine lettuce.
  3. Drizzle the Caesar dressing over the pasta mixture and toss until everything is evenly coated.
  4. Add the grated Parmesan cheese and season with salt and pepper to taste. Toss again to combine.
  5. If desired, top with croutons for added crunch. Serve immediately or chill in the refrigerator for 30 minutes before serving for a refreshing taste.
