In a large mixing bowl, combine the softened vanilla ice cream and cherry pie filling. Stir gently until the cherries are evenly distributed throughout the ice cream.
In a separate bowl, mix the crushed graham crackers, chopped pecans, powdered sugar, vanilla extract, and almond extract until well combined.
Line a baking sheet with parchment paper. Using a cookie scoop or your hands, form the ice cream mixture into small patties and place them on the prepared baking sheet.
Once all patties are formed, roll each one in the graham cracker mixture until fully coated.
Drizzle the melted chocolate over the patties or dip half of each patty into the chocolate.
Place the baking sheet in the freezer for at least 2 hours to allow the patties to firm up.
