  • 8 ounces breakfast sausage casings removed
  • 4 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 1/4 cup salsa optional
  • Fresh cilantro for garnish optional

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the breakfast sausage and cook, breaking it apart with a spatula, until browned and cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  2. In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Pour the egg mixture into the skillet with the sausage. Cook, stirring gently, until the eggs are just set, about 3-4 minutes.
  3. Remove the skillet from heat and stir in the shredded cheddar cheese until melted and evenly distributed.
  4. Warm the flour tortillas in a separate skillet or microwave for about 20 seconds until pliable.
  5. Spoon the cheesy sausage and egg mixture evenly onto each tortilla. If desired, add a spoonful of salsa on top.
  6. Roll up each tortilla tightly, folding in the sides as you go to create a wrap.
  7. Serve immediately, garnished with fresh cilantro if desired.
