Remove the skillet from heat and stir in the shredded cheddar cheese until melted and evenly distributed.
Warm the flour tortillas in a separate skillet or microwave for about 20 seconds until pliable.
Spoon the cheesy sausage and egg mixture evenly onto each tortilla. If desired, add a spoonful of salsa on top.
Roll up each tortilla tightly, folding in the sides as you go to create a wrap.
Serve immediately, garnished with fresh cilantro if desired.
