Method
- Preheat the oven to 350°F.
- In a large mixing bowl, combine the ground beef, shredded cheddar cheese, breadcrumbs, chopped onion, minced garlic, egg, ketchup, Worcestershire sauce, mustard, salt, black pepper, paprika, oregano, and milk. If using, add the diced pickles. Mix until just combined; do not overmix.
- Transfer the meat mixture into a loaf pan, shaping it into a loaf. Smooth the top with a spatula.
- Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F. If desired, brush additional ketchup on top during the last 10 minutes of baking for added flavor.
- Remove from the oven and let the meatloaf rest for 10 minutes before slicing and serving.

Notes
- For a smoky flavor, add 1 teaspoon of smoked paprika or a few drops of liquid smoke to the meat mixture.
- For a healthier version, substitute ground turkey for the beef and use whole wheat breadcrumbs.
