- Gather a large mixing bowl. Peel and dice 2 ripe mangoes, then add them to the bowl. Finely shred 2 cups of green cabbage and grate 1 large carrot before adding them to the mix. Thinly slice 1 red bell pepper and ¼ cup of red onion, tossing everything together.
