  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the diced peaches, bourbon, honey, soy sauce, olive oil, Dijon mustard, garlic powder, salt, and black pepper. Mix well to create the marinade.
  3. Place the salmon fillets on the prepared baking sheet and pour the peach marinade over them, ensuring they are well coated.
  4. Roast in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.
  5. Remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
