Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and sugar on medium speed for 3-5 minutes until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then add vanilla and mix until smooth.
- Whisk together flour, baking powder, and salt in a separate bowl.
- Gradually add the dry mixture to the wet ingredients and mix until just combined.
- Scoop rounded tablespoons of dough onto the baking sheet, leaving about 2 inches between each.
- Bake for 15 to 20 minutes until lightly golden but soft in the middle.
- Whip together heavy cream, powdered sugar, and vanilla until soft peaks form.
- Fill half of the cookies with the whipped cream filling and top with another cookie.
- Melt chocolate chips and butter together in the microwave until smooth.
- Dip the tops of each filled cookie into the chocolate glaze and let excess drip off.
