Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter and sugar on medium speed for 3-5 minutes until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then add vanilla and mix until smooth.
  4. Whisk together flour, baking powder, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. Scoop rounded tablespoons of dough onto the baking sheet, leaving about 2 inches between each.
  7. Bake for 15 to 20 minutes until lightly golden but soft in the middle.
  8. Whip together heavy cream, powdered sugar, and vanilla until soft peaks form.
  9. Fill half of the cookies with the whipped cream filling and top with another cookie.
  10. Melt chocolate chips and butter together in the microwave until smooth.
  11. Dip the tops of each filled cookie into the chocolate glaze and let excess drip off.
