Ingredients

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 cup fresh blueberries
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
  • 2 tablespoons honey
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Lemon wedges for serving

Method

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the honey, balsamic vinegar, olive oil, thyme, garlic powder, salt, and pepper. Mix well to create a marinade.
  3. Place the chicken breasts in a shallow dish and pour the marinade over them, ensuring they are well coated. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. In an oven-safe skillet, melt the butter over medium heat. Add the marinated chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  5. Add the fresh blueberries to the skillet around the chicken. Pour any remaining marinade over the chicken and blueberries.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  7. Remove from the oven and let the chicken rest for 5 minutes before slicing. Serve with lemon wedges.
