Ingredients
  

  • 4 cups sweet potatoes peeled and cubed
  • 1/2 cup brown sugar
  • 1/2 cup milk
  • 1/4 cup butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup pecans chopped
  • 1/2 cup mini marshmallows optional

Method
 

  1. Preheat the oven to 350°F (175°C).
  2. Boil sweet potatoes in a large pot until tender, about 15-20 minutes.
  3. Drain and mash the sweet potatoes in a large bowl.
  4. Add brown sugar, milk, melted butter, eggs, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes and mix well.
  5. Transfer the mixture to a greased baking dish.
  6. In a separate bowl, combine chopped pecans and remaining brown sugar, then sprinkle over the sweet potato mixture.
  7. If desired, add mini marshmallows on top.
  8. Bake in the preheated oven for 30-35 minutes, or until heated through and the topping is golden brown.
