For the Meatloaf
  • 1 pound lean ground beef 80/20 fat ratio recommended
  • 1 cup breadcrumbs Italian or seasoned for extra flavor
  • 1 medium onion finely diced, sautéed in butter
  • 2 eggs large
  • 0.5 cup milk
  • 0.33 cup ketchup or chili sauce for mixture and glaze
  • 1 tablespoon Italian seasoning
  • 2 tablespoons parsley fresh or dried
  • 1 teaspoon kosher salt adjust to taste
  • 0.5 teaspoon black pepper adjust to taste
For the Glaze
  • 0.33 cup chili sauce for glaze
  • 2 tablespoons brown sugar optional for sweetness

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a baking pan with aluminum foil, coating with cooking spray.
  2. Sauté finely diced onions in a skillet with butter until tender and translucent, about 5 minutes; let cool.
Mixing
  1. In a bowl, mix eggs and milk, add breadcrumbs, and let sit for 5-10 minutes to absorb moisture.
  2. Combine the breadcrumb mixture with ground beef, sautéed onions, ketchup or chili sauce, seasoning, salt, and pepper; mix gently.
Baking
  1. Shape the mixture into a loaf and place it in the prepared pan, smoothing the surface.
  2. Bake for 40 minutes until browned on top.
  3. Prepare the glaze by mixing chili sauce, ketchup, and brown sugar.
  4. Spread the glaze over the meatloaf and return to the oven for an additional 15-30 minutes until the internal temperature reaches 160°F.
  5. Remove from oven and let rest for 10 minutes before slicing.
