Ingredients
  

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups cooked white rice
  • ¼ cup soy sauce
  • 2 green onions sliced (for garnish)
  • Sesame seeds for garnish, optional

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.
  2. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the sliced red and yellow bell peppers and minced garlic. Cook for another 3-4 minutes until the peppers are tender.
  4. Season the mixture with cumin, smoked paprika, salt, and black pepper. Stir well to combine and cook for an additional 2 minutes.
  5. Add the cooked rice and soy sauce to the skillet. Mix everything together and heat through for about 2-3 minutes.
  6. Serve the beef and pepper mixture in bowls, garnished with sliced green onions and sesame seeds if desired.
