Ingredients
  

  • 2 cups cooked chicken shredded or diced
  • 4 cups mixed salad greens such as romaine, spinach, and arugula
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup black beans rinsed and drained
  • 1/2 red onion thinly sliced
  • 1 avocado pitted and peeled
  • 1/4 cup plain Greek yogurt
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup BBQ sauce your favorite brand

Method
 

  1. In a large bowl, combine the mixed salad greens, cherry tomatoes, corn, black beans, and red onion. Toss to mix well.
  2. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, honey, garlic powder, salt, and pepper. Blend until smooth and creamy. If the dressing is too thick, add a little water to reach your desired consistency.
  3. In a separate bowl, mix the shredded chicken with the BBQ sauce until well coated.
  4. To assemble the salad, divide the salad mixture among four plates. Top each salad with the BBQ chicken and drizzle with the creamy avocado dressing.
  5. Serve immediately and enjoy!
