  • 2 cloves Garlic Minced
  • 1/2 cup Sour Cream Can substitute with Greek yogurt
For the Topping
  • 1 cup Mozzarella Shredded

Step-by-Step Instructions
  1. Heat olive oil in a skillet over medium heat. Add diced onion and sauté for 3-4 minutes until translucent.
  2. Add minced garlic and sauté for an additional 30 seconds, until fragrant.
  3. Incorporate thawed spinach into the skillet, cook for 2-3 minutes, and season with salt and pepper.
  4. Remove from heat and stir in sour cream until fully combined.
  5. Preheat oven to 175°C (347°F). Season salmon fillets with salt and pepper.
  6. Sear salmon for about 2 minutes on each side in a large oven-safe skillet.
  7. Place seared salmon in a baking dish, spoon spinach mixture over, and sprinkle with mozzarella.
  8. Bake for 15-20 minutes or until salmon is opaque and flakes easily with a fork.
  9. Remove from oven and let rest for a couple of minutes before serving warm.
