  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh lemon juice
  • 2 green onions sliced (for garnish)

Method
 

  1. Preheat your oven to 400°F. Line a baking dish with parchment paper or lightly grease it with cooking spray.
  2. In a small bowl, whisk together the honey, soy sauce, olive oil, minced garlic, grated ginger, salt, black pepper, and lemon juice until well combined.
  3. Place the cod fillets in the prepared baking dish and pour the honey marinade over the top, ensuring the fish is well coated. Let it marinate for at least 15 minutes at room temperature, or up to 1 hour in the refrigerator for more flavor.
  4. Bake the marinated cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and is opaque throughout.
  5. Remove from the oven and let it rest for a few minutes. Garnish with sliced green onions before serving.
