For the Cod
  • 4 fillets Cod thick, white cod fillets, firm and glossy
  • 1 teaspoon Salt enhances natural flavor
  • 1 teaspoon Pepper adds mild heat
  • 2 tablespoons Olive Oil for sautéing, can substitute with avocado oil
For the Cream Sauce
  • 1 medium Onion sauté until translucent
  • 2 cloves Garlic minced, fresh preferred
  • 1 tablespoon Ginger grated, can substitute with ground ginger
  • 1 can Coconut Milk full-fat preferred
  • 3 tablespoons Lemon Juice freshly squeezed
  • 1 teaspoon Lemon Zest enhances lemon flavor

Method
 

Cooking Instructions
  1. Preheat your oven to 180°C (350°F) and grease the baking dish with olive oil.
  2. Season the cod fillets generously with salt and pepper on both sides.
  3. In a large skillet, heat olive oil and sauté chopped onion until translucent, about 3–4 minutes.
  4. Add minced garlic and grated ginger, cooking for an additional 1–2 minutes until fragrant.
  5. Pour in coconut milk, lemon juice, and lemon zest; stir and let simmer for 5 minutes.
  6. Place the seasoned cod in the baking dish and pour the cream sauce over it.
  7. Bake for 20–25 minutes until the cod flakes easily with a fork.
  8. Allow to rest for a few minutes before serving paired with jasmine rice or sautéed vegetables.
