- Preheat your oven to 180°C (350°F) and grease the baking dish with olive oil.
- Season the cod fillets generously with salt and pepper on both sides.
- In a large skillet, heat olive oil and sauté chopped onion until translucent, about 3–4 minutes.
- Add minced garlic and grated ginger, cooking for an additional 1–2 minutes until fragrant.
- Pour in coconut milk, lemon juice, and lemon zest; stir and let simmer for 5 minutes.
- Place the seasoned cod in the baking dish and pour the cream sauce over it.
- Bake for 20–25 minutes until the cod flakes easily with a fork.
- Allow to rest for a few minutes before serving paired with jasmine rice or sautéed vegetables.
