  • 1 teaspoon Pepper To taste

  • 2 cloves Garlic Minced
  • 1 tablespoon Ginger Grated
  • 1 can Coconut Milk Full-fat preferred
  • 2 tablespoons Lemon Juice

Cooking Steps
  1. Preheat the oven to 180°C (350°F).
  2. Season the cod fillets with salt and pepper.
  3. In a skillet, heat olive oil and sauté diced onion until translucent (4-5 minutes).
  4. Add minced garlic and grated ginger to the onion, cooking for 1-2 minutes until fragrant.
  5. Pour in coconut milk, lemon juice, and lemon zest, and let simmer for 5 minutes.
  6. Place seasoned cod in a baking dish and pour the sauce over the fish.
  7. Bake for 20-25 minutes until the cod flakes easily with a fork.
