- Preheat the oven to 180°C (350°F).
- Season the cod fillets with salt and pepper.
- In a skillet, heat olive oil and sauté diced onion until translucent (4-5 minutes).
- Add minced garlic and grated ginger to the onion, cooking for 1-2 minutes until fragrant.
- Pour in coconut milk, lemon juice, and lemon zest, and let simmer for 5 minutes.
- Place seasoned cod in a baking dish and pour the sauce over the fish.
- Bake for 20-25 minutes until the cod flakes easily with a fork.
