Ingredients
  

  • 2 racks of baby back ribs about 4 pounds total
  • 1 tablespoon kosher salt
  • 1 tablespoon black pepper
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup bacon jam store-bought or homemade
  • 1 cup barbecue sauce your favorite brand
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar

Method
 

  1. Preheat your oven to 300°F.
  2. Remove the membrane from the back of the ribs and pat them dry with paper towels.
  3. In a small bowl, mix together the kosher salt, black pepper, smoked paprika, garlic powder, and onion powder. Rub this spice mixture evenly over both sides of the ribs.
  4. Place the ribs on a baking sheet lined with aluminum foil, bone side down. Cover the ribs tightly with another piece of foil.
  5. Bake in the preheated oven for 2.5 to 3 hours, or until the ribs are tender.
  6. While the ribs are baking, combine the bacon jam, barbecue sauce, apple cider vinegar, and brown sugar in a saucepan over medium heat. Stir until well combined and heated through.
  7. Once the ribs are done baking, remove them from the oven and increase the oven temperature to 400°F.
  8. Brush a generous amount of the bacon jam mixture over the ribs, coating them well. Return the ribs to the oven, uncovered, and bake for an additional 15-20 minutes, or until the sauce is caramelized and bubbly.
  9. Remove from the oven and let the ribs rest for 10 minutes before slicing. Serve with extra bacon jam sauce on the side.
