Ingredients
  

  • 2 cups cooked chicken breast shredded
  • 1 ripe avocado mashed
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced cucumber
  • 1/4 cup chopped fresh cilantro

Method
 

  1. In a large mixing bowl, combine the shredded chicken and mashed avocado.
  2. Add the Greek yogurt, lime juice, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Fold in the diced red bell pepper, cucumber, and chopped cilantro.
  4. Taste and adjust seasoning if necessary.
  5. Serve immediately on a bed of greens, in a sandwich, or in lettuce wraps.
