Method
 

Cooking Steps
  1. Preheat your oven to 200°C (392°F).
  2. Prepare the butternut squash by peeling, cubing, and tossing it in olive oil, salt, and pepper. Roast for 15-20 minutes.
  3. Wash and halve the Brussels sprouts, toss in olive oil, salt, and pepper. Add to the baking sheet and roast for 20-30 minutes.
  4. Bring a large pot of salted water to a boil. Cook the bow tie pasta according to package instructions for 8-10 minutes.
  5. Heat a large skillet over medium heat and cook sliced smoked sausage for 5-7 minutes until browned.
  6. In the same skillet, sauté minced garlic for 1-2 minutes. Add butter, then the drained pasta, reserved pasta water, salt, pepper, and smoked paprika.
  7. Fold in roasted butternut squash, Brussels sprouts, and cooked sausage. Stir to combine.
