Add gochujang, soy sauce, sesame oil, honey, garlic, and ginger to the skillet. Stir well to combine and cook for an additional 3-5 minutes until everything is heated through. Season with salt and pepper to taste.
To serve, divide the cooked rice among bowls. Top each bowl with the gochujang beef mixture, shredded carrots, sliced cucumber, and chopped green onions.
Sprinkle sesame seeds on top for garnish. Serve immediately and enjoy!
