- 2 cups unsweetened shredded coconut
- 1 cup almond flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (dairy-free)
Instructions
- In a large mixing bowl, combine the shredded coconut, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined.
- Once the mixture is well combined, use your hands to form small balls, about 1 inch in diameter. Place the balls on a parchment-lined baking sheet.
- Refrigerate the coconut balls for at least 30 minutes to firm up.
- While the coconut balls are chilling, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
- Remove the chilled coconut balls from the refrigerator. Dip each ball into the melted chocolate, allowing any excess chocolate to drip off. Return the chocolate-covered balls to the parchment-lined baking sheet.
- Once all the balls are coated, place them back in the refrigerator for another 15-20 minutes to set the chocolate.
- Serve chilled or at room temperature. Enjoy your delicious vegan coconut treats!
Notes
- For added flavor, mix in 1/4 cup of chopped nuts or dried fruit into the coconut mixture before forming the balls.
- To make these treats even more festive, roll the coconut balls in crushed nuts or additional shredded coconut after dipping them in chocolate.
