- 2 cups cooked chicken, shredded or diced
- 1 cup plain Greek yogurt
- 1 medium cucumber, grated and excess moisture squeezed out
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup red onion, finely chopped
- 1/4 cup cherry tomatoes, halved
- 4 cups mixed greens or lettuce
Instructions
- In a large mixing bowl, combine the Greek yogurt, grated cucumber, dill, lemon juice, minced garlic, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Add the shredded chicken, red onion, and cherry tomatoes to the yogurt mixture. Gently fold the ingredients together until the chicken and vegetables are evenly coated with the tzatziki dressing.
- Serve the tzatziki chicken salad over a bed of mixed greens or lettuce.
- For best flavor, chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

- For added crunch, mix in some diced bell peppers or sliced radishes.
