Description

A delicious creamy Tuna Pasta Salad recipe that is perfect for a light meal or side dish.


Ingredients

  • 8 ounces whole wheat pasta (fusilli or rotini)
  • 1 can (5 ounces) tuna in water, drained
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons of mayo
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Salt to taste

Instructions

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, black pepper, and salt. Mix until smooth and creamy.
  3. Add the drained tuna to the bowl and gently break it apart with a fork.
  4. Stir in the cooled pasta, cherry tomatoes, cucumber, red onion, and parsley. Mix until all ingredients are well combined and coated with the dressing.
  5. Taste and adjust seasoning with additional salt or pepper if needed.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.

Notes

  • For added crunch, toss in some diced bell peppers or shredded carrots.
