Description
A delicious creamy Tuna Pasta Salad recipe that is perfect for a light meal or side dish.

- 8 ounces whole wheat pasta (fusilli or rotini)
- 1 can (5 ounces) tuna in water, drained
- 1/2 cup plain Greek yogurt
- 2 tablespoons of mayo
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Salt to taste
Instructions
- Cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the Greek yogurt, mayonnaise, Dijon mustard, lemon juice, garlic powder, onion powder, black pepper, and salt. Mix until smooth and creamy.
- Add the drained tuna to the bowl and gently break it apart with a fork.
- Stir in the cooled pasta, cherry tomatoes, cucumber, red onion, and parsley. Mix until all ingredients are well combined and coated with the dressing.
- Taste and adjust seasoning with additional salt or pepper if needed.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.
Notes
- For added crunch, toss in some diced bell peppers or shredded carrots.
- Substitute canned salmon or chicken for the tuna for a different protein option.
