Description

Tofu Kebabs are a delicious and healthy grilling option, packed with flavor and perfect for any barbecue.


Ingredients

  • 1 block (14 ounces) firm tofu, drained and pressed
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, sliced into thick rounds
  • 1 small red onion, cut into wedges
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Wooden or metal skewers

Instructions

  1. Cut the pressed tofu into 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, whisk together the soy sauce, olive oil, maple syrup, garlic, ginger, smoked paprika, black pepper, and red pepper flakes (if using).
  3. Add the tofu cubes and vegetables to the marinade, tossing gently to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  4. Preheat your grill or grill pan over medium heat.
  5. Thread the marinated tofu and vegetables onto the skewers, alternating between tofu and veggies.
  6. Grill the kebabs for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred, and the tofu is heated through.
  7. Serve the kebabs hot, garnished with fresh herbs if desired.

Notes

  • For added flavor, try marinating the tofu overnight.
  • You can substitute the vegetables with your favorites, such as cherry tomatoes, mushrooms, or asparagus.
  • For a spicy kick, brush the kebabs with sriracha or your favorite hot sauce before grilling.
