- 1 block (14 ounces) firm tofu, drained and pressed
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 medium zucchini, sliced into thick rounds
- 1 small red onion, cut into wedges
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons maple syrup
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Wooden or metal skewers
Instructions
- Cut the pressed tofu into 1-inch cubes. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- In a large bowl, whisk together the soy sauce, olive oil, maple syrup, garlic, ginger, smoked paprika, black pepper, and red pepper flakes (if using).
- Add the tofu cubes and vegetables to the marinade, tossing gently to coat. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill or grill pan over medium heat.
- Thread the marinated tofu and vegetables onto the skewers, alternating between tofu and veggies.
- Grill the kebabs for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred, and the tofu is heated through.
- Serve the kebabs hot, garnished with fresh herbs if desired.
Notes
- For added flavor, try marinating the tofu overnight.
- You can substitute the vegetables with your favorites, such as cherry tomatoes, mushrooms, or asparagus.
- For a spicy kick, brush the kebabs with sriracha or your favorite hot sauce before grilling.
