Ingredients

  • 3 pounds chicken pieces (legs, thighs, or breasts)
  • 1 cup plain yogurt
  • 2 tablespoons vegetable oil
  • 2 tablespoons lemon juice
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons tandoori masala (store-bought or homemade)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional, for heat)
  • Fresh cilantro, for garnish
  • Lemon wedges, for serving

Instructions

  1. In a large bowl, combine the yogurt, vegetable oil, lemon juice, garlic, ginger, tandoori masala, cumin, paprika, turmeric, salt, black pepper, and cayenne pepper. Mix well to create a marinade.
  2. Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
  3. Preheat your grill or oven to 425°F. If using a grill, lightly oil the grates to prevent sticking.
  4. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the remaining marinade.
  5. Place the chicken on the grill or a baking sheet lined with parchment paper if using the oven. Cook for 25-30 minutes, turning halfway through, until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F.
  6. Once cooked, remove the chicken from the grill or oven and let it rest for 5 minutes.
  7. Garnish with fresh cilantro and serve with lemon wedges on the side.

Notes

  • For a smoky flavor, add a few drops of liquid smoke to the marinade or use a charcoal grill.
  • Serve with a side of cucumber raita (yogurt sauce) and naan for a complete meal.
