Ingredients

  • 1 ½ pounds flank steak, sliced thinly against the grain
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • ¼ cup rice vinegar
  • 2 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon red pepper flakes (optional)
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)
  • Cooked rice (for serving)

Instructions

  1. In a slow cooker, combine the soy sauce, brown sugar, rice vinegar, sesame oil, garlic, ginger, and red pepper flakes (if using). Stir until the sugar is dissolved.
  2. Add the sliced flank steak to the slow cooker, ensuring the beef is well coated with the sauce.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  4. Once cooked, shred the beef with two forks and mix it back into the sauce.
  5. Serve the Korean beef over cooked rice, garnished with chopped green onions and sesame seeds.

Notes

  • For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the slow cooker during the last 30 minutes of cooking.
  • Substitute the flank steak with sirloin or chuck roast for a different flavor and texture.
