Description
Slow Cooker Cowboy Casserole is a hearty and easy comfort food dish made with ground beef, beans, corn, and topped with cheese and tater tots.

- 2 pounds ground beef
- 1 medium onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 (15-ounce) can black beans, drained and rinsed
- 1 (15-ounce) can corn, drained
- 1 (15-ounce) can diced tomatoes with green chilies
- 1 (1-ounce) packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup frozen tater tots
- Salt and pepper to taste
- Fresh cilantro, for garnish (optional)
Instructions
- In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and transfer the beef to the slow cooker.
- Add the diced onion, bell pepper, and minced garlic to the slow cooker with the beef. Stir to combine.
- Add the black beans, corn, diced tomatoes (with juices), and taco seasoning to the slow cooker. Mix well and season with salt and pepper to taste.
- Cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese over the top and arrange the frozen tater tots in a single layer on top of the cheese. Cover and continue cooking until the tater tots are golden and crispy.
- Once done, garnish with fresh cilantro if desired, and serve hot.
Notes
- For a spicier version, add chopped jalapeños or a dash of hot sauce to the mixture.
- Substitute ground turkey or chicken for a leaner option, and use sweet potatoes instead of tater tots for a healthier twist.
