Delicious and easy-to-make Sausage Egg and Cheese Breakfast Roll-Ups perfect for a quick breakfast.

- 2 large flour tortillas
- 4 large eggs
- 1/4 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cooked breakfast sausage, crumbled
- 1 cup shredded cheddar cheese
- 2 tablespoons butter
- Salsa or hot sauce (optional, for serving)
Instructions
- In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- In a large skillet, melt 1 tablespoon of butter over medium heat. Add the egg mixture and cook, stirring gently until the eggs are scrambled and just set, about 3-4 minutes. Remove from heat.
- In the same skillet, add the remaining tablespoon of butter and warm the tortillas for about 30 seconds on each side until pliable.
- Lay each tortilla flat and divide the scrambled eggs evenly between them. Top with crumbled sausage and shredded cheese.
- Roll up each tortilla tightly, starting from one end and tucking in the sides as you go.
- Place the roll-ups seam side down in the skillet over medium heat and cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet and slice in half. Serve warm with salsa or hot sauce if desired.
Notes
- For a healthier option, use whole wheat tortillas and turkey sausage.
- Add diced bell peppers or onions to the egg mixture for extra flavor and nutrition.
