- 2 large flour tortillas
- 6 ounces breakfast sausage, crumbled
- 4 large eggs
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon onion powder (optional)
Instructions
- In a skillet over medium heat, add the olive oil and crumbled breakfast sausage. Cook until browned and fully cooked, about 5-7 minutes. Remove from heat and set aside.
- In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
- In the same skillet, pour in the egg mixture and cook over medium-low heat, stirring gently until the eggs are scrambled and just set, about 3-4 minutes. Remove from heat.
- Lay the flour tortillas flat on a clean surface. Divide the cooked sausage evenly between the two tortillas, placing it in the center of each.
- Top the sausage with the scrambled eggs and sprinkle the shredded cheddar cheese on top.
- Roll up each tortilla tightly, folding in the sides as you go to secure the filling.
- Place the roll-ups seam-side down in the skillet over medium heat. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet, slice in half if desired, and serve warm.
Notes
- For a spicier kick, add diced jalapeños or hot sauce to the egg mixture.
- Substitute the breakfast sausage with turkey sausage or a plant-based sausage for a lighter or vegetarian option.
