Ingredients

  • 2 large flour tortillas
  • 6 ounces breakfast sausage, crumbled
  • 4 large eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon onion powder (optional)

Instructions

  1. In a skillet over medium heat, add the olive oil and crumbled breakfast sausage. Cook until browned and fully cooked, about 5-7 minutes. Remove from heat and set aside.
  2. In a bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined.
  3. In the same skillet, pour in the egg mixture and cook over medium-low heat, stirring gently until the eggs are scrambled and just set, about 3-4 minutes. Remove from heat.
  4. Lay the flour tortillas flat on a clean surface. Divide the cooked sausage evenly between the two tortillas, placing it in the center of each.
  5. Top the sausage with the scrambled eggs and sprinkle the shredded cheddar cheese on top.
  6. Roll up each tortilla tightly, folding in the sides as you go to secure the filling.
  7. Place the roll-ups seam-side down in the skillet over medium heat. Cook for 2-3 minutes on each side until golden brown and the cheese is melted.
  8. Remove from the skillet, slice in half if desired, and serve warm.
