Description

A rich and creamy Red Velvet Strawberry Cheesecake that combines the classic flavors of red velvet cake with fresh strawberries and a smooth cheesecake filling.

Ingredients

Scale
  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 tablespoon cocoa powder
  • 1 tablespoon red food coloring
  • 1 cup sour cream
  • 1 ½ cups fresh strawberries, hulled and sliced
  • ½ cup strawberry jam

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine the crushed graham crackers, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add 1 cup of sugar and continue to beat until creamy.
  4. Add the vanilla extract, eggs, cocoa powder, and red food coloring to the cream cheese mixture. Beat until fully incorporated and smooth.
  5. Mix in the sour cream until just combined. Do not overmix.
  6. Pour the cheesecake batter over the prepared crust in the springform pan. Smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
  8. Remove the cheesecake from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
  9. Before serving, spread the strawberry jam evenly over the top of the cheesecake and arrange the sliced strawberries on top.

Notes

  • For a chocolate twist, add mini chocolate chips to the cheesecake batter before baking.
  • Substitute the strawberry jam with raspberry or blueberry jam for a different flavor profile.
