- 12 oz smoked sausage, sliced
- 8 oz pasta (penne or rotini)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- In a large pot, sauté the sliced smoked sausage over medium heat until browned.
- Add the diced onion, garlic, and bell pepper, cooking until softened.
- Stir in the diced tomatoes, chicken broth, Italian seasoning, salt, and pepper.
- Add the pasta and bring to a boil.
- Reduce heat and simmer until the pasta is cooked and the liquid is mostly absorbed.
- If desired, stir in shredded cheese until melted.
- Serve hot and enjoy!
