Ingredients

  • 1 teaspoon baking soda

  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup mini marshmallows
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and smooth, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  6. Using a cookie scoop or tablespoon, take a portion of dough and flatten it slightly in your hand. Place 2-3 mini marshmallows in the center and wrap the dough around them, rolling it into a ball. Repeat with the remaining dough.
  7. Roll each cookie ball in powdered sugar before placing them on the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
