- 2 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 cup mini marshmallows
- 1/2 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and smooth, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- Using a cookie scoop or tablespoon, take a portion of dough and flatten it slightly in your hand. Place 2-3 mini marshmallows in the center and wrap the dough around them, rolling it into a ball. Repeat with the remaining dough.
- Roll each cookie ball in powdered sugar before placing them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- These cookies are best enjoyed warm, as the marshmallows will be gooey and the chocolate will be melty.
- For a richer flavor, try adding a teaspoon of espresso powder to the dough.
- You can also substitute the mini marshmallows with crushed peppermint candies for a festive twist during the holidays.
