  • 1 pound boneless, skinless chicken breasts, diced

  • 1 medium onion, diced

  • 1 teaspoon dried basil
  • 4 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup heavy cream
  • 1 package (16 ounces) potato gnocchi
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced chicken, salt, and black pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
  2. In the same pot, add the diced onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic, oregano, and basil, cooking for an additional minute until fragrant.
  3. Pour in the chicken broth and diced tomatoes, bringing the mixture to a boil. Reduce the heat and let it simmer for about 10 minutes.
  4. Stir in the heavy cream and bring the soup back to a gentle simmer. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes.
  5. Once the gnocchi is cooked, add the cooked chicken back into the pot along with the fresh spinach. Stir until the spinach wilts, about 2 minutes.
  6. Remove from heat and stir in the grated Parmesan cheese until melted and combined. Adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley.
