Maple Pancake Poppers are a fun and sweet twist on traditional pancakes, perfect for breakfast or a snack.

- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1/2 cup cooked and crumbled bacon
- 1/4 cup maple syrup (plus extra for serving)
- Cooking spray or additional butter for greasing
Instructions
- In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, combine the milk, egg, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Gently fold in the crumbled bacon.
- Preheat your oven to 350°F and grease a mini muffin tin with cooking spray or butter.
- Fill each muffin cup about 2/3 full with the pancake batter.
- Bake for 10-12 minutes or until the tops are golden brown and a toothpick inserted in the center comes out clean.
- Once baked, remove the pancake poppers from the oven and let them cool for a few minutes before transferring them to a wire rack.
- Drizzle with maple syrup before serving.
Notes
- For a sweeter twist, add chocolate chips or blueberries to the batter before baking.
- To make them extra fluffy, separate the egg and beat the egg white until stiff peaks form, then fold it into the batter gently before baking.
