- 4 large russet potatoes
- 8 ounces cooked bacon, chopped
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup green onions, sliced
- 4 large eggs
- Salt and pepper to taste
- Olive oil for rubbing
Instructions
- Preheat your oven to 400°F.
- Wash the potatoes thoroughly and pat them dry. Rub each potato with a little olive oil and sprinkle with salt.
- Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.
- While the potatoes are baking, cook the eggs to your preference (scrambled, fried, or poached). Season with salt and pepper.
- Once the potatoes are done, remove them from the oven and let them cool for a few minutes. Cut a slit down the center of each potato and gently squeeze the ends to open them up.
- Fluff the insides of the potatoes with a fork and add a dollop of sour cream, followed by the chopped bacon, shredded cheese, and cooked eggs.
- Top with sliced green onions and additional salt and pepper if desired. Serve immediately.

- For a healthier option, substitute turkey bacon for the regular bacon.
- You can also add sautéed vegetables like bell peppers and spinach for extra flavor and nutrition.
