A delicious and easy-to-make Jiffy Corn Casserole that is perfect for any gathering or family meal.

- 2 (15-ounce) cans of whole kernel corn, drained
- 1 (15-ounce) can of creamed corn
- 1 (8.5-ounce) box of Jiffy corn muffin mix
- 1 cup of sour cream
- 1/2 cup of unsalted butter, melted
- 1 cup of shredded cheddar cheese (optional)
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the whole kernel corn, creamed corn, Jiffy corn muffin mix, sour cream, melted butter, salt, and black pepper. Stir until well combined.
- If using, fold in the shredded cheddar cheese until evenly distributed.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
- Allow the casserole to cool for about 10 minutes before serving.
Notes
- For a spicier kick, add 1-2 diced jalapeños or a teaspoon of cayenne pepper to the mixture before baking.
- Substitute the cheddar cheese with pepper jack or mozzarella for a different flavor profile.
