Description
Homemade ice cream sandwiches made with soft cookies and your favorite ice cream.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 large egg
- 1 cup semi-sweet chocolate chips
- 1 pint of your favorite ice cream (softened)
Instructions
- Preheat your oven to 350°F. Line two baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Mix in the vanilla extract and egg until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
- Once the cookies are cool, take one cookie and scoop a generous amount of softened ice cream onto the flat side. Top with another cookie, pressing down gently to create a sandwich.
- Repeat with the remaining cookies and ice cream.
- For best results, place the assembled ice cream sandwiches in the freezer for at least 1 hour to firm up before serving.
Notes
- Try using different flavors of ice cream, such as mint chocolate chip or cookie dough.
- Roll the edges of the ice cream sandwiches in sprinkles, chopped nuts, or mini chocolate chips for added texture and flavor.
