- 2 large chicken breasts (about 1 pound total)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 cup crumbled feta cheese
- 1/4 cup honey
- 1 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry with paper towels and season both sides with salt and black pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5 minutes on each side until golden brown.
- While the chicken is cooking, in a small bowl, mix together the honey, red pepper flakes, and lemon juice.
- Once the chicken is browned, pour the honey mixture over the chicken breasts, then sprinkle the crumbled feta cheese on top.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
- Remove from the oven and let it rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add more red pepper flakes or drizzle additional hot sauce over the chicken before serving.
- Serve with a side of roasted vegetables or a fresh salad to balance the richness of the dish.
