Description

Honey BBQ Chicken Rice is a delicious one-pan meal featuring marinated chicken thighs grilled to perfection and served over a bed of fluffy rice.


Ingredients

  • 2 cups cooked white rice
  • 1 lb boneless, skinless chicken thighs
  • 1/2 cup honey
  • 1/2 cup BBQ sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup chopped green onions (for garnish)

Instructions

  1. In a medium bowl, mix together honey, BBQ sauce, soy sauce, garlic powder, onion powder, black pepper, and salt to create the marinade.
  2. Place the chicken thighs in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat your grill or stovetop grill pan over medium-high heat.
  4. Remove the chicken from the marinade, letting any excess drip off. Discard the remaining marinade.
  5. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  6. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
  7. Serve the sliced chicken over a bed of cooked rice and garnish with chopped green onions.

  • For a spicier kick, add a teaspoon of cayenne pepper to the marinade.
