A flavorful recipe for garlic and herb lamb chops, perfect for grilling.
Ingredients

- 1 pound lamb chops (about 4–6 chops)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)
- 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, black pepper, and lemon juice to create a marinade.
- Place the lamb chops in a large resealable plastic bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to overnight for more flavor.
- Preheat your grill or stovetop grill pan over medium-high heat. Remove the lamb chops from the marinade and let excess marinade drip off.
- Grill the lamb chops for about 4-5 minutes on each side for medium-rare, or until they reach your desired level of doneness. Use a meat thermometer to check for an internal temperature of 145°F for medium-rare.
- Once cooked, remove the lamb chops from the grill and let them rest for 5 minutes. Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the marinade.
- Serve with a side of roasted vegetables or a fresh salad for a complete meal.
