Description

Delicious garlic butter meatballs served over creamy Parmesan linguine.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 1/4 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces linguine pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, pepper, and Italian seasoning. Mix until just combined.
  3. Form the mixture into 1-inch meatballs and place them on the prepared baking sheet. Bake for 20-25 minutes or until cooked through.
  4. While the meatballs are baking, cook the linguine according to package instructions. Drain and set aside.
  5. In a large skillet over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant.
  6. Stir in lemon juice and red pepper flakes (if using). Add the cooked meatballs to the skillet and toss to coat in the garlic butter sauce. Cook for an additional 2-3 minutes.
  7. In a separate saucepan, combine heavy cream and Parmesan cheese over medium heat. Stir until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.
  8. Toss the cooked linguine in the creamy Parmesan sauce until well coated.
  9. Serve the creamy linguine topped with garlic butter meatballs and garnish with chopped parsley.

Notes

  • For a lighter version, substitute ground turkey or chicken for the beef.
  • Add sautéed spinach or steamed broccoli to the linguine for added nutrition and color.
