- 1 cup Greek yogurt (plain or vanilla)
- 1/2 cup creamy peanut butter
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
- 1/4 cup crushed nuts (optional)
Instructions
- In a mixing bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well combined.
- If desired, fold in the mini chocolate chips and crushed nuts for added texture and flavor.
- Line a baking sheet with parchment paper. Using a spoon or a small cookie scoop, drop tablespoon-sized portions of the mixture onto the prepared baking sheet.
- Place the baking sheet in the freezer and freeze for about 2-3 hours, or until the bites are firm.
- Once frozen, transfer the bites to an airtight container or a zip-top bag for easy storage. Keep them in the freezer until ready to enjoy.
Notes
- For a different flavor, try using almond butter instead of peanut butter, or mix in some cocoa powder for a chocolate twist.
- You can roll the bites in shredded coconut or crushed graham crackers before freezing for an extra layer of flavor and crunch.
